In Praise of Celery

Many people, myself among them, have assumed for years that celery has only minimal nutritional value.

"You eat celery if you want to lose weight, since it has very few calories, but there is no other reason to eat celery," many Americans, myself among them, have noted to ourselves for years.

In fact, as I recently learned for the first time, raw celery is a good source of Riboflavin, Vitamin B6, Pantothenic Acid, Calcium, Magnesium, and Phosphorus. Celery is also a very good source of Vitamin A, Vitamin C, Vitamin K, Folate, Potassium and Manganese.

Also, a 110-gram serving of raw celery contains 2 grams of dietary fiber, and one gram of protein.

All of the above factual information about raw celery can be obtained at the following authoritative website:
http://www.nutritiondata.com/facts/vegetables-and-vegetable-products/2396/2

That website factual account about celery also explains that a 110-gram serving of raw celery contains zero grams of fat, only 18 calories, and only two grams of sugar.

It makes good sense, then, to celebrate and eat celery as a very fine vegetable that is worthy of praise.
